Life is curious, or better, we’d say tasty, friable and crisp like a… rusk. Basically, like one of the tastiest rusks in Italy, as gran “Gambero Rosso” (Gambero Rosso S.p.A. is an Italian publishing house specialist in food&wine by means of publication of guides, broadcasts, training, a monthly magazine and several movable applications) stated during a deep report.
Twenty years ago, Germana and Hervé Tranchero, managers of “Quintino Sella” hut, asked “Cradel” for having “special” rusks, so Cristiano and Gianluca recovered the classical recipe of “biscôit”, getting exactly taste and crispness they wanted. Then, for many years, “biscôit” have been almost an “exclusive” of the hut, but there were more and more request to widen the production, so here’s “Rustiche”.
Three-day processing, attention to the chain, and… a friend calls and tells you: «“Gambero Rosso” has voted your rusks as the best of Italy!». Time to realise it isn’t a joke and, then, the inner satisfaction of who’s doing his/her best and sees how his/her efforts are recognised by criticism (and a lot of customers!)
Mara Nocilla, of grand www.gamberorosso.it reviews Cradel “Rustiche” like this: It’s this company from Varaita Valley (Cuneo) to be classed at the top with “white” rusks and to get high-scoring by taste panel. Its Rustiche – the proposal of old recipe of “biscôit” – gain thanks to artisanship, exuberance and character of fragrances and savours, by distancing from competitors in running. Maybe thanks to whole milk powder, the only caged product, (as well as soft wheat flour, sunflower oil, sugar, salt, brewer's yeast, flavours). Everything is pure and homemade.
It is surely a big goal to find own rusks “ahead” well-known “names” of national production. The two friends and co-workers keep in mind the other products too.
The signature song is surely filled bugie (sweet biscuit for carnival) and, indeed, rusks with and without sugar, and spelt rusks. Then, there are tarts, whose processing considers several manual stages and non-sweet cookies, ideal for low-fat and sugar.
The fact that they produce everything “in the family” allows a direct check on raw materials, carefully sorted among the best ones.
